Academics from Mexico noted that there are some regional differences in traditional Mexican cuisine in an international webinar held with STEKOM University. One that is unique is the Mexican Pacific regional cuisine. One of the more interesting regions in Mexico when it comes to its cuisine, the South Pacific Coast region is known for its use of classic indigenous recipes. Although many recipes can be updated to use chicken and pork, many local people still use rabbit and armadillos wherever they can get them. It's even not uncommon to use julies, a variety of stink bugs, in some dishes like salsa. This region is home to Oaxaca, which also has its own type of cheese. Interestingly, while chili peppers are used around the world as a spice and are mostly ground and sprinkled throughout dishes, they are used more as a spice in this region of Mexico, often with fully dried peppers topping their dishes. This is a must stop destination if you want to get to know different regions of Mexican cuisine.


The Pacific Ocean, unsurprisingly, as the world's largest body of water, is home to some of the best seafood on the planet. Here you can get staples like snapper, sea bass, tuna and swordfish, as well as fillets of more exotic fish like porgy, amberjack and sailfish. Also, octopus is incorporated into Mexican dishes from this region. So the Pacific Coast is the king of ceviche—a dish of raw fish pickled in orange juice and then tossed with fresh vegetables.


This regional Mexican cuisine is characterized by an abundance of fresh, local ingredients, and may offer a variety of fruit, vegetables, cheese and chilies. It is for this reason that Mexican Pacific Coast cuisine has had such an enormous influence on the trendy and chic Californian cuisine scene.


However, if you venture a little inland, you can find many Mexican specialties that also originate from this region. Many of them come from the Mexican state of Jalisco, where the city of Guadalajara is located. This is where you find dishes like menudo, birria, tortas ahogadas, and arguably the most famous: the chilorio.


So, choosing one dish typical for this region is almost impossible. For the sake of this article, I've nominated Baja-style fish tacos as the Pacific Coast's standout dish. Here, chunks of fresh fish are beer battered and deep fried, then served with a thick salsa that is often filled with fruit, and slaw.
